Started in 1889, Adachi Jozo is located in the valley of Takagun in Hyogo Prefecture. The local climate, with hot days and cool nights, is ideal for growing black soy beans, which are also a traditional New Year's food. It is from these black soy beans that fifth generation owner Mr. Tatsuaki Adachi brews his kuromame soy sauce, aging it for over a year in traditional cedar vats. This is a truly one-of-a-kind soy sauce.
