These thin wafers are perfect to accompany a dessert and/or as little treats on their own.
Make about 4 dozen
1 1/2 tablespoons butter, unsalted, cool, not cold
1 cup brown sugar, light
2 tablespoons flour, all purpose
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup Wadaman roasted organic black sesame seeds
Preheat oven to 350F. In a mixer, cream the butter and sugar until light and well combined. While keeping the mixer on low speed, add the egg until combined, then the flour, salt, vanilla and sesame seeds. Mix until the ingredients are just combined.
Drop small spoons of dough onto a parchment lined baking sheet. Flatten the wafers with an offset spatula that is dipped in ice water. Bake for about 6 minutes or until golden brown with deeper golden edges. Gently pull the parchment off the baking sheet pan and place onto cooling racks. Let rest until cooled and then gently pull wafers away from parchment. If by chance the cookies are not completely firm, bake a little longer in the oven.
